Oh, this Christmas cake! A raw cake full of sultanas, goji berries, almonds, apricots and dates, and with a healthy dose of baobab powder. A white chocolate marzipan layer so good you want to eat it on its own. And a good layer of vanilla cashew frosting. More than one excited fruit-cake-hating taster was converted, and I will definitely be making this in quantities for our family this Christmas. I developed this recipe for Inspiral and it will be launched later in the year as part of their new Christmas range.
